Chocolate Zucchini Bread

     I have to admit I’m not much of a baker, and I don’t exactly enjoy baking. I’d much rather spend my time eating the desserts. But A’s doctor wants her to consume more cooked dairy to see how her stomach will handle it, so I’ve been researching some recipes. My sister-in-law makes these awesome zucchini bites for my nieces, and I feel as though everyone has been talking about replacing items with zucchini. Whether its zoodles or zucchini chips, I see zucchini all over my instagram feed. So I decided to give zucchini bread a try! This recipe is far from perfect, and I might have overdone it with the chocolate, but it is DELICIOUS!!! And if you have a fussy little eater, it’s a great way to sneak in those veggies.
When I first combined the ingredients I found the dough to be too dry, which is why I added applesauce to the recipe. I love healthy substitutions, and A is a big fan of apples. I also LOVE baking with whole wheat flour, especially when I’m making banana bread. It does tend to make things dry, so adding more liquid to a recipe is a good idea. The prep time for this recipe is about 15 minutes, and I usually make it during A’s nap time since it’s so quick and easy!
